Due to candida, I've been on a super strict diet of mostly lean meats and lots of veggies with limited grains and no dairy, gluten or processed sugar. It's definitely been a challenge but after 3 months I'm feeling lots better!
In the meanwhile, I've been trying to find ways to make a quick, easy and healthy lunch, and I've been making variations on collard green veggie wraps. They are so easy to make and so delicious!! Check out my basic recipe below. There are so many things you can add or substitute, so play with your own delicious recipe!!
~2 collard green leaves
~3-4 Tbs Hummus
~1 veggie burger of your choice (I love Sunshine or Hilary's or make your own!)
~1/4 c. sliced green or red peppers
~1/8 c. thinly sliced red onion
~5-6 sliced black olives
~1/4 c. sliced cucumber
~1/4 c. sliced tomato
~1/4 c. mixed baby greens
*Optional: bacon or sliced chicken breast (humanely raised and processed), sprouts, fermented veggies, cabbage or any other meat/veggie that you desire!
1. Slice the collard green leaves along the stem, and you will have 4 collard green leaf halves
2. Spread hummus and avocado along each collard green leaf
3. Cut up veggie burger and evenly distribute it on each leaf, and do the same with all the veggies.
4. Wrap up the collard green wrap around veggies and enjoy!
